We recently all came together to celebrate the year that has been. It doesn’t get much better than having a few precious child free hours to laugh, talk, drink and eat beautiful fresh food. One of the dishes that was served, alongside market fresh oysters and prawns, was Tahitian Fish that was passed down from Claudine’s parents (who are both French chefs). We thought it would only be fair to share this scrumptious, fresh and simple recipe with you just in time for Christmas!

Tahitian Fish  (serves 8)

Ingredients:

750g Mahi Mahi fish

1 Grated carrot

1 Diced cucumber

1/2 Spanish onion finely sliced

Chopped Shallots

1 can of coconut cream

6 limes


Steps:           

Cut the Mahi Mahi fish into small cubes and place in a large bowl.

Hand juice limes and place over the Mahi Mahi fish for 3 hours.

Add grated carrot, cucumber, onion, shallots, coconut cream, salt & pepper in with the fish and mix through. Let this sit for 1 hour to let all the ingredients fuse together.

Serve (we served it in empty coconuts, which works a treat and embraces the coconut flavour)
